  • 1 whole whole chicken
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 cups jasmine rice
  • 4 cups chicken broth
  • 1 tablespoon vegetable oil
  • 1 lime, for garnish
  • Fresh cilantro, for garnish

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Season the chicken with salt, pepper, minced garlic, soy sauce, fish sauce, brown sugar, coriander, and cumin.
  2. Heat the vegetable oil in a large oven-safe skillet over medium-high heat. Sear the chicken for 5-7 minutes until the skin is crispy, then remove from heat.
  3. In the same skillet, add the jasmine rice and chicken broth, stirring to combine. Place the chicken on top of the rice.
Cooking
  1. Cover the skillet with a lid or foil and bake for 25-30 minutes, or until the chicken is cooked through (internal temperature should be 165°F/74°C).
  2. Let the chicken rest for a few minutes before carving.
Serving
  1. Serve over the fragrant rice, garnished with lime and fresh cilantro.

Notes

For extra flavor, marinate the chicken in the seasoning for a few hours or overnight before cooking. Keep an eye on the chicken while it’s in the oven to avoid overcooking. For added nutrition, consider adding vegetables to the rice, such as peas or carrots.
