Marination
- In a large bowl, marinate the chicken pieces with soy sauce, sugar, sesame oil, garlic, ginger, gochugaru, salt, and pepper for at least 30 minutes.
Noodle Preparation
- Soak the glass noodles in warm water for about 30 minutes, then drain.
Cooking
- In a large pot, heat a tablespoon of oil over medium heat. Add the marinated chicken and sauté until lightly browned.
- Add onions, carrots, and potatoes to the pot, cooking for a few minutes.
- Pour in the water and bring to a boil. Reduce heat and let it simmer, covered, for about 30 minutes, or until the chicken is tender.
- Add the soaked glass noodles to the pot and cook for an additional 10 minutes.
- Taste and adjust seasoning if necessary.
Notes
For a deeper flavor, marinate the chicken overnight. Adjust spice level by adding more or less gochugaru. You can add more vegetables like mushrooms or bell peppers for extra nutrition and flavor.
