  • 2 cups fresh spinach Fresh spinach is recommended for better flavor.
  • 1 cup parmesan cheese Adds a wonderful flavor to the sauce.
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Season chicken breasts with salt, pepper, and garlic powder. Sear them for 4-5 minutes on each side until they are golden brown.
  3. In a separate bowl, mix heavy cream, sun-dried tomatoes, and spinach until well combined.
Baking
  1. Place the seared chicken in a baking dish. Pour the creamy mixture over the chicken and sprinkle parmesan cheese on top.
  2. Bake for 25-30 minutes or until the chicken is cooked through and the sauce is bubbly.

Notes

To store leftovers, let the chicken cool to room temperature. Place it in an airtight container and store in the refrigerator for 3-4 days. For longer storage, freeze for up to 2 months and thaw in the fridge before reheating.
