  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • 1 14.5 oz can diced tomatoes undrained
  • 1 9 oz package frozen green beans
  • 4 pieces small red potatoes quartered

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large baking dish, combine olive oil, garlic powder, onion powder, basil, oregano, thyme, red pepper flakes, salt, and pepper.
  3. Add chicken breasts to the mixture and coat them well.
  4. Place the diced tomatoes, green beans, and quartered potatoes around the chicken.
  5. Sprinkle the top with Parmesan cheese.
Cooking
  1. Cover the dish with foil and bake for 25 minutes.
  2. Remove the foil and bake for an additional 15-20 minutes, until the chicken is cooked through and the vegetables are tender.

Notes

For extra flavor, marinate the chicken in the olive oil and spices for a few hours before baking. Feel free to swap the vegetables for your favorites, such as bell peppers or zucchini. Make sure to cut the potatoes into small pieces to ensure they cook evenly. This dish can last up to 3 days in the refrigerator. To reheat, simply pop it in the oven or microwave until warmed through.
