Ingredients
  

Chicken and Coating
  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup flour
  • 1 cup breadcrumbs
  • 1 large egg, beaten
Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1-2 tablespoons sriracha (to taste)
  • Salt and pepper to taste

Preparation
  1. In a bowl, mix the mayonnaise, sweet chili sauce, and sriracha. Set aside.
  2. Season chicken pieces with salt and pepper.
  3. Dredge each piece of chicken in flour, dip in beaten egg, and finally coat with breadcrumbs.
Cooking
  1. Heat oil in a pan over medium-high heat.
  2. Fry the chicken pieces until golden and crispy, about 5-7 minutes.
  3. Drain on paper towels.
  4. Toss fried chicken in the sauce until well coated.
Serving
  1. Serve warm as an appetizer or main dish.

Notes

Make sure the oil is hot before frying to ensure a crispy exterior. Feel free to adjust the level of sriracha in the sauce to suit your spice preference. For added flavor, you can marinate the chicken pieces in buttermilk for a few hours before cooking. For a healthier version, you can bake the chicken bites instead of frying. Just place the coated chicken pieces on a baking sheet and spray with cooking oil. Bake at 400°F (200°C) for about 20-25 minutes, flipping halfway, until they are golden and cooked through.
