Main Ingredients
  • 2 cups cooked chicken, shredded Rotisserie chicken works great for quick prep.
  • 1/2 cup BBQ sauce Feel free to use any BBQ sauce you prefer.
  • 8 pieces tostada shells You can substitute with tortilla chips.
Toppings
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup corn Canned or frozen works.
  • 1/2 cup black beans Rinsed and drained.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • to taste sour cream and avocado For topping, optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the shredded chicken with the BBQ sauce until well coated.
  3. Place the tostada shells on a baking sheet and bake for about 5 minutes, or until crispy.
  4. Remove the tostada shells from the oven.
Assembly
  1. Spoon the BBQ chicken mixture evenly onto each tostada.
  2. Top with shredded lettuce, diced tomatoes, corn, black beans, and cheese.
  3. Return to the oven for another 5 minutes to melt the cheese.
  4. Serve hot with optional sour cream and avocado on top.

Notes

If you have leftovers, store the components separately to maintain crispiness. These can be stored for up to 3 days in airtight containers in the refrigerator.
