Preparation
- Preheat your oven to 375°F (190°C).
- In a large pot, brown the beef stew meat over medium heat.
- Add the chopped onion, diced carrots, and sliced mushrooms to the pot. Cook until the vegetables are softened.
- Stir in the flour, then pour in the Guinness beer and beef broth. Sprinkle the thyme and add salt and pepper to taste.
- Bring the mixture to a simmer. Reduce heat, cover, and cook for 1.5 to 2 hours until the beef is tender.
Making the crust
- Mix the all-purpose flour, baking powder, and salt in a bowl.
- Cut in the chilled butter until the mixture resembles coarse crumbs.
- Stir in the sour cream until a dough forms.
- Roll out the dough and line a pie dish with it. Fill the pie crust with the beef mixture.
- Roll out the remaining dough to cover the pie and seal the edges. Cut slits in the top for steam to escape.
- Brush the top with beaten egg for a shiny finish.
Baking
- Bake for 25-30 minutes until the crust is golden brown.
- Let the pie cool for a few minutes before serving.
Notes
Make sure to brown the beef well for better flavor. You can use different vegetables like peas or potatoes to enhance the filling. For a thicker filling, let it simmer longer or add a little cornstarch mixed with water.
