Ingredients
  

For the filling
  • 2 lbs beef stew meat Tender pieces for the filling
  • 1 cup Guinness beer Adds rich flavor
  • 1 cup beef broth For moisture
  • 1 onion, chopped Adds depth of flavor
  • 2 cups mushrooms, sliced For earthy flavor
  • 2 carrots, diced For sweetness and color
  • 2 tbsp flour Thickens the filling
  • 2 tsp thyme Herb for seasoning
  • Salt and pepper to taste For seasoning
For the crust
  • 2 cups all-purpose flour Base for the crust
  • 1 tsp baking powder Helps the crust to rise
  • 1/2 cup butter, chilled and cubed For flakiness
  • 1 egg for egg wash To brush on the crust for shine

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, brown the beef stew meat over medium heat.
  3. Add the chopped onion, diced carrots, and sliced mushrooms to the pot. Cook until the vegetables are softened.
  4. Stir in the flour, then pour in the Guinness beer and beef broth. Sprinkle the thyme and add salt and pepper to taste.
  5. Bring the mixture to a simmer. Reduce heat, cover, and cook for 1.5 to 2 hours until the beef is tender.
Making the crust
  1. Mix the all-purpose flour, baking powder, and salt in a bowl.
  2. Cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Stir in the sour cream until a dough forms.
  4. Roll out the dough and line a pie dish with it. Fill the pie crust with the beef mixture.
  5. Roll out the remaining dough to cover the pie and seal the edges. Cut slits in the top for steam to escape.
  6. Brush the top with beaten egg for a shiny finish.
Baking
  1. Bake for 25-30 minutes until the crust is golden brown.
  2. Let the pie cool for a few minutes before serving.

Notes

Make sure to brown the beef well for better flavor. You can use different vegetables like peas or potatoes to enhance the filling. For a thicker filling, let it simmer longer or add a little cornstarch mixed with water.
