Ingredients
  

For the Beef Stew
  • 2 lbs beef stew meat, cut into cubes Use tender cuts for better flavor.
  • 4 cups beef broth Can substitute with vegetable broth for a lighter version.
  • 1 medium onion, chopped Yellow or white onions work well.
  • 3 medium carrots, sliced
  • 3 medium potatoes, diced Russet or Yukon Gold potatoes are recommended.
  • 2 cloves garlic, minced
  • 1 teaspoon thyme Fresh thyme can be used for enhanced flavor.
  • 1 leaf bay leaf
  • Salt and pepper to taste
For the Dumplings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, softened
  • 1 cup milk

Method
 

Preparation
  1. In a large pot, brown the beef cubes over medium-high heat.
  2. Add the chopped onion and minced garlic, cooking until the onion is translucent.
  3. Stir in the carrots, potatoes, beef broth, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce the heat and let it simmer for about 1.5 to 2 hours, until the beef is tender.
Dumpling Preparation
  1. In a mixing bowl, combine flour, baking powder, and salt.
  2. Cut in the butter until the mixture is crumbly.
  3. Stir in the milk to form a dough.
  4. Drop spoonfuls of the dough into the stew about 15 minutes before the stew is done.
  5. Cover and cook until the dumplings are fluffy and cooked through.

Notes

For a richer flavor, brown the beef in olive oil. Customize vegetables, and use cornstarch for a thicker stew if desired.
