  • 2 cups cooked, shredded chicken Use leftover rotisserie chicken for convenience.
  • 6 small corn tortillas, cut into strips Can substitute flour tortillas if preferred.
  • 1 cup shredded cheese (cheddar or Mexican blend) Experiment with different cheese types for varying flavors.
  • 1 can black beans, drained and rinsed Good source of protein.
  • 1 cup corn, canned or frozen
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1/2 cup sour cream (optional) Can replace with dairy-free alternatives.
  • Jalapeños for topping (optional) Add for extra spice.
  • Chopped cilantro for garnish (optional) For freshness.

Method
 

Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream.
  3. In a greased baking dish, layer half of the tortilla strips, followed by the chicken mixture, and top with half of the cheese.
  4. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
Baking
  1. Bake for 25-30 minutes or until the cheese is bubbly and golden.

Notes

Serve hot with optional jalapeños and cilantro. For storage, cool and store in an airtight container for 3-4 days. Reheat at 350°F (175°C).
