Preparation
- Preheat oven to 375°F (190°C).
- In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, taco seasoning, and sour cream.
- In a greased baking dish, layer half of the tortilla strips, followed by the chicken mixture, and top with half of the cheese.
- Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
Baking
- Bake for 25-30 minutes or until the cheese is bubbly and golden.
Notes
Serve hot with optional jalapeños and cilantro. For storage, cool and store in an airtight container for 3-4 days. Reheat at 350°F (175°C).
