  • 1 lb chicken breast, diced Use boneless chicken breast for easier cooking.
  • 1 lb smoked sausage, sliced Any type of smoked sausage can be used.
  • 1 bell pepper, chopped Red, green, or yellow bell pepper works.
  • 1 onion, chopped Use yellow or white onion.
  • 3 cloves garlic, minced Fresh garlic adds the best flavor.
  • 1 can (14.5 oz) diced tomatoes, with juices Fire-roasted tomatoes add extra flavor.
  • 1 cup chicken broth Low-sodium broth is recommended.
  • 1 cup heavy cream Use half-and-half for a lighter dish.
  • 2 cups uncooked pasta (penne or rotini) Make sure to use uncooked pasta.
  • 2 tsp Cajun seasoning Adjust according to personal spice preference.
  • Salt and pepper to taste Use according to flavor preference.
  • Chopped parsley for garnish Fresh parsley adds color and flavor.

Method
 

Preparation
  1. In the slow cooker, combine the chicken, sausage, bell pepper, onion, garlic, diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper.
Cooking
  1. Cook on low for 6-8 hours or high for 3-4 hours.
  2. About 30 minutes before serving, stir in the uncooked pasta and heavy cream.
  3. Cover and cook until the pasta is tender.
Serving
  1. Serve garnished with chopped parsley.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat with a splash of chicken broth or cream if needed.
