  • 1 pound chicken breasts
  • 1 pound smoked sausage
  • 1 onion, diced
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 8 ounces pasta (penne or rotini)
  • Chopped parsley for garnish

Method
 

Preparation
  1. Place the chicken breasts, sausage, onion, bell pepper, and garlic in the slow cooker.
  2. Add the diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper. Stir to combine.
  3. Cover and cook on low for 4-5 hours or until the chicken is cooked through.
Finishing Touches
  1. Before serving, remove the chicken, shred it, and return it to the slow cooker.
  2. Stir in the heavy cream.
  3. Cook the pasta according to package instructions and drain.
  4. Add the cooked pasta to the slow cooker and mix well.
Serving
  1. Serve warm, garnished with chopped parsley.

Notes

Tip: Feel free to adjust the spice level by adding more or less Cajun seasoning. For a healthier option, you can use turkey sausage instead of smoked sausage. Consider adding extra heavy cream or a splash of cream cheese for a creamier texture. Store leftovers in an airtight container for 3-4 days.
