Ingredients
  

Chicken and Marinade
  • 8 pieces Chicken drumsticks Bone-in, skin-on preferred for juiciness
  • 2 tablespoons Cajun seasoning Adjust amount based on spice preference
  • 2 tablespoons Olive oil For marinating
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 2 tablespoons Lemon juice For added flavor

Method
 

Preparation
  1. In a large bowl, mix Cajun seasoning, olive oil, salt, black pepper, garlic powder, onion powder, paprika, and lemon juice.
  2. Add chicken drumsticks to the bowl and coat them well in the seasoning mixture.
  3. Marinate for at least 30 minutes, or up to overnight in the refrigerator.
Cooking
  1. Preheat the grill to medium-high heat.
  2. Place the drumsticks on the grill and cook for about 20-25 minutes, turning occasionally, until the chicken reaches an internal temperature of 165°F and is nicely charred.
  3. Remove from grill and let rest for a few minutes before serving.

Notes

Serve with coleslaw, potato salad, or grilled vegetables. Garnish with fresh parsley or lemon wedges. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 3 months. For more flavor, marinate overnight.
