Preparation
- In a small saucepan, combine soy sauce, water, and sugar. Heat over medium heat until the sugar dissolves and the mixture thickens slightly. Set aside.
- Heat 1 tablespoon of oil in a skillet over medium heat. Scramble the eggs with salt and white pepper until just set. Remove from the skillet and set aside.
Cooking
- In the same skillet, add the diced Spam. Cook over medium heat until browned and slightly crispy.
- Pour the prepared sauce over the Spam. Cook for 2–3 minutes, stirring to coat the Spam evenly until it caramelizes.
Assembly
- Serve the caramelized Spam over cooked white rice, and top with scrambled eggs.
- Add furikake, chopped green onions, sesame seeds, and optional fried garlic for extra flavor.
- Serve immediately while warm.
Notes
Ensure the Spam gets crispy for added texture. Modify the sweetness of the sauce by adjusting the sugar. Use leftover rice for easier preparation—day-old rice works great. Customize toppings to suit your taste preferences or what you have available.
