Ingredients
  

Sauce
  • 1 tablespoon soy sauce
  • 1/4 cup water
  • 2 tablespoons sugar
Eggs
  • 6 large eggs, whisked
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1 tablespoon oil (for scrambling)
Main
  • 1 can (12 oz) Spam, diced into 1-inch cubes
  • 2 cups cooked white rice
Toppings
  • Furikake Japanese rice seasoning
  • Chopped green onion For garnish
  • Fried garlic Optional garnish
  • Sesame seeds For garnish

Method
 

Preparation
  1. In a small saucepan, combine soy sauce, water, and sugar. Heat over medium heat until the sugar dissolves and the mixture thickens slightly. Set aside.
  2. Heat 1 tablespoon of oil in a skillet over medium heat. Scramble the eggs with salt and white pepper until just set. Remove from the skillet and set aside.
Cooking
  1. In the same skillet, add the diced Spam. Cook over medium heat until browned and slightly crispy.
  2. Pour the prepared sauce over the Spam. Cook for 2–3 minutes, stirring to coat the Spam evenly until it caramelizes.
Assembly
  1. Serve the caramelized Spam over cooked white rice, and top with scrambled eggs.
  2. Add furikake, chopped green onions, sesame seeds, and optional fried garlic for extra flavor.
  3. Serve immediately while warm.

Notes

Ensure the Spam gets crispy for added texture. Modify the sweetness of the sauce by adjusting the sugar. Use leftover rice for easier preparation—day-old rice works great. Customize toppings to suit your taste preferences or what you have available.
