Ingredients
  

Main Ingredients
  • 4 slices slices Italian bread, thickly sliced Use crusty Italian bread for best results.
  • 2 tablespoons pesto
  • 1 breast chicken breast, cooked and sliced in half lengthwise Use freshly cooked chicken or rotisserie chicken.
  • 2 tablespoons red onion, slivered Add more if desired.
  • 1/4 cup roasted red peppers, thinly sliced
  • 4 ounces low moisture, part-skim mozzarella Can substitute with provolone or goat cheese.
  • Cooking spray For grilling the sandwiches.

Method
 

Preparation
  1. Preheat a panini press or a skillet over medium heat.
  2. Spread pesto on one side of each slice of Italian bread.
  3. On two slices, layer sliced chicken, slivered red onion, roasted red peppers, and mozzarella cheese.
  4. Top with the remaining slices of bread, pesto side down.
  5. Spray the outside of the sandwiches with cooking spray.
Cooking
  1. Place the sandwiches in the panini press or skillet. If using a skillet, press down with a spatula and cook until golden brown, about 3-4 minutes per side.
  2. Remove from heat, slice in half, and serve warm.

Notes

For extra crunch, use crusty bread instead of soft Italian bread. Add other ingredients like spinach or arugula for texture. Wrap leftovers tightly and store in the fridge for 1-2 days or freeze for up to a month.
