  • 2 pieces chicken breasts, diced
  • 200 g chorizo sausage, sliced
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 piece bell pepper, chopped
  • 1 cup green peas
  • 1.5 cups saffron rice
  • 4 cups chicken broth
  • 1 tsp saffron threads
  • to taste olive oil
  • to taste salt and pepper
  • as needed lemon wedges for serving

Method
 

Preparation
  1. In a large pan, heat olive oil over medium heat.
  2. Add the chorizo and cook until browned. Remove and set aside.
  3. In the same pan, add chicken and cook until browned.
  4. Add onion and garlic, and sauté until softened.
  5. Stir in bell pepper and peas.
  6. Add saffron rice and stir to coat.
  7. Pour in chicken broth and bring to a boil.
  8. Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked.
  9. Stir in the cooked chorizo and season with salt and pepper.
  10. Serve with lemon wedges.

Notes

The lemon adds a nice touch of brightness to the dish. You can also serve it with a side salad or some crusty bread to soak up the delicious juices. Make sure to use good-quality saffron for the best flavor. Adjust the spice level by adding more or less chorizo. For added flavor, try adding other vegetables, like tomatoes or asparagus.
