- In a large pan, heat olive oil over medium heat.
- Add the chorizo and cook until browned. Remove and set aside.
- In the same pan, add chicken and cook until browned.
- Add onion and garlic, and sauté until softened.
- Stir in bell pepper and peas.
- Add saffron rice and stir to coat.
- Pour in chicken broth and bring to a boil.
- Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked.
- Stir in the cooked chorizo and season with salt and pepper.
- Serve with lemon wedges.
Notes
The lemon adds a nice touch of brightness to the dish. You can also serve it with a side salad or some crusty bread to soak up the delicious juices. Make sure to use good-quality saffron for the best flavor. Adjust the spice level by adding more or less chorizo. For added flavor, try adding other vegetables, like tomatoes or asparagus.
