Ingredients
  

Meatloaf Ingredients
  • 2 lbs ground chicken
  • 1 each egg
  • 1/4 cup plain bread crumbs
  • 2 teaspoons minced onion
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon dried parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup mayonnaise
  • 6 slices Virginia chicken ham
  • 6 slices Swiss cheese
  • 3/4 cup panko breadcrumbs for topping
Gravy Ingredients
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/4 cup heavy cream
  • 1 cup skim or 1% milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the ground chicken, egg, plain bread crumbs, minced onion, garlic powder, dried parsley, salt, and black pepper until well combined.
  3. Press half of the chicken mixture into a loaf shape in a baking dish.
  4. Layer the slices of Virginia chicken ham and Swiss cheese on top of the chicken mixture.
  5. Place the remaining chicken mixture on top and shape it into a loaf.
  6. Sprinkle the panko breadcrumbs on top of the meatloaf.
Cooking
  1. Bake for 45-50 minutes or until the meatloaf is cooked through.
  2. For the creamy Dijon gravy, melt butter in a saucepan over medium heat.
  3. Whisk in the flour and cook until it gets lightly browned.
  4. Gradually add the heavy cream and milk, stirring until the gravy thickens. Season with salt and pepper to taste.
  5. Slice the meatloaf and serve it with the creamy Dijon gravy on top.

Notes

Make sure the chicken is well mixed but do not overwork it to keep the meatloaf tender. You can add chopped fresh herbs for extra flavor if you like. If you prefer a crispy topping, broil the meatloaf for the last few minutes of cooking after applying the panko breadcrumbs.
