Meatloaf Ingredients
  • 2 lbs ground chicken Use good quality for best flavor.
  • 1 count egg
  • 1/4 cup plain bread crumbs
  • 2 teaspoons minced onion
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon dried parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/4 cup mayonnaise
  • 6 slices Virginia chicken ham
  • 6 slices Swiss cheese
  • 3/4 cup panko breadcrumbs For topping.
Gravy Ingredients
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/4 cup heavy cream
  • 1 cup skim or 1% milk

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the ground chicken, egg, bread crumbs, minced onion, garlic powder, dried parsley, salt, black pepper, and mayonnaise. Mix until well combined.
  3. Stir in the chicken ham and Swiss cheese.
  4. Shape the mixture into a loaf and place it in a baking dish.
  5. Sprinkle the top with panko breadcrumbs.
Baking
  1. Bake in the preheated oven for about 50-60 minutes, or until fully cooked.
Gravy Preparation
  1. In a small saucepan, melt the butter over medium heat.
  2. Whisk in the flour to make a roux and cook for about 1 minute.
  3. Gradually add the heavy cream and milk, stirring until the mixture thickens.
Serving
  1. Serve slices of meatloaf with the creamy Dijon gravy.

Notes

Make sure to use good quality ground chicken for the best flavor. Don't overmix the meatloaf mixture to avoid toughness. Variations can include using turkey, cheddar, or adding vegetables.
