  • 1 cup orzo pasta
  • 1 lb chicken breast, diced
  • 1 tablespoon olive oil
  • 2 cups chicken broth
  • 1 lemon juiced and zested
  • 2 cups spinach, chopped
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Cooking
  1. In a large pot, heat olive oil over medium heat. Add diced chicken and cook until golden brown.
  2. Add the orzo and stir for a minute to toast it lightly.
  3. Pour in the chicken broth, lemon juice, and zest. Bring to a boil, then reduce heat and simmer for 10-12 minutes or until orzo is al dente.
  4. Stir in chopped spinach and cook until wilted.
  5. Remove from heat, stir in Parmesan cheese, and season with salt and pepper.
  6. Serve garnished with fresh parsley.

Notes

Make sure to stir the orzo occasionally as it cooks to prevent it from sticking to the pot. Taste before serving to adjust the seasoning. For a creamier dish, you can add a splash of cream or more cheese when mixing in the Parmesan.
