Main Ingredients
  • 2 cups cooked, shredded chicken Great for using up leftovers.
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix) Use your favorite cheese or a combination.
  • 1/2 cup chopped bell peppers Any color of bell pepper works.
  • 1/2 cup chopped onions Can use red or white onions.
  • 1/2 teaspoon garlic powder Add garlic for flavor.
  • 1/2 teaspoon chili powder Adjust to taste for spice preference.
  • 1/2 teaspoon cumin
  • to taste Salt and pepper
  • 4 large flour tortillas Make sure they are large enough to hold ingredients.
  • 2 tablespoons butter For frying the quesadillas.
For Serving
  • to taste Salsa For dipping.
  • to taste Guacamole For dipping.
  • to taste Sour cream For dipping.

Method
 

Preparation
  1. Heat a skillet over medium heat and melt the butter.
  2. On a large flour tortilla, layer half of the shredded chicken, cheese, bell peppers, onions, garlic powder, chili powder, cumin, salt, and pepper.
  3. Fold the tortilla in half and place it in the skillet.
Cooking
  1. Cook for 2-3 minutes on each side, until the cheese is melted and the tortilla is golden brown.
  2. Remove from skillet and cut into wedges.
Serving
  1. Serve with salsa, guacamole, and sour cream.

Notes

Use a mix of cheeses for a richer flavor. Add jalapeƱos or other spices if you like it spicy. Make sure your skillet is hot enough for a nice crisp on the tortilla. Experiment with different vegetables, like corn or spinach, to customize your quesadillas.
