Method

Marinate the Chicken
  1. In a bowl, combine the minced garlic, ground cumin, ground coriander, paprika, turmeric, cinnamon, cayenne pepper, olive oil, salt, and pepper. Add the chicken thighs and mix well to coat. Cover and marinate in the fridge for at least 1 hour, or overnight for best flavor.
Prepare the Creamy Garlic Sauce
  1. In another bowl, mix the Greek yogurt, minced garlic, lemon juice, tahini, and salt. Stir until smooth and well combined. Set aside.
Cook the Chicken
  1. Heat a grill or skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until it’s fully cooked and golden brown. Remove from heat and let rest for a few minutes before slicing.
Assemble and Serve
  1. Slice the chicken into strips. Serve wrapped in pita bread or flatbreads. Top with fresh vegetables and drizzle with the creamy garlic sauce. Add pickles for a tangy contrast if desired.

Notes

Marinate the chicken overnight for the best flavor. Use a meat thermometer to ensure the chicken reaches an internal temperature of 165°F. Feel free to add other toppings like olives or hummus for extra flavor. If you want a charred flavor, cook the chicken on a grill.
