  • 1 lb chicken breast, sliced
  • 2 cups mixed vegetables (like bell peppers, broccoli, and carrots) Use your choice of colorful vegetables.
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 pieces green onions, chopped For garnish.
  • Salt and pepper to taste

Preparation
  1. Cook the rice noodles according to package instructions and set aside.
  2. Chop vegetables and sliced chicken.
Cooking
  1. In a large pan, heat sesame oil over medium heat.
  2. Add garlic and ginger and sauté for about 30 seconds.
  3. Add sliced chicken to the pan, and cook until browned and cooked through.
  4. Add mixed vegetables and stir-fry until tender.
  5. Pour in the soy sauce and stir to combine.
  6. Add the cooked rice noodles, stirring until everything is evenly mixed.
  7. Season with salt, pepper, and top with chopped green onions.
Serving
  1. Serve hot, garnished with extra chopped green onions if desired. Pair with lime wedges or crispy spring rolls.

Notes

Chop vegetables in similar sizes for even cooking. Feel free to add your favorite vegetables or swap chicken for tofu for a vegetarian option. Don't overcook the vegetables; they should be tender yet crisp. You can change up the flavors with different sauces like teriyaki or hoisin.
