  • 1 pound chicken breasts, boneless and skinless
  • 8 ounces egg noodles
  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

  • Chopped parsley for garnish

  1. Cook egg noodles according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Season chicken breasts with salt and pepper, then add to the skillet. Cook until browned and cooked through, about 6-7 minutes per side. Remove chicken from skillet and let it rest before slicing.
  4. In the same skillet, add butter and minced garlic. Cook until fragrant, about 1 minute.
  5. Add cooked noodles to the skillet, tossing them in the buttery sauce.
  6. Serve the noodles topped with sliced chicken and garnish with chopped parsley.

Notes

To store leftovers, place the chicken and noodles in an airtight container. It can be kept in the fridge for up to 3 days. When reheating, add a splash of water or broth to keep the noodles from drying out. You can warm it in the microwave or on the stove. Make sure not to overcook the chicken to keep it juicy. Feel free to add vegetables, like peas or spinach, to the noodles for extra nutrients. If you want some spice, add a pinch of red pepper flakes when cooking the garlic.
