  • 4 pieces chicken thighs, bone-in and skin-on
  • 2 tablespoons olive oil
  • 1 piece lime, zested and juiced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder Adjust based on spice preference.
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon honey Can be replaced with maple syrup or agave nectar.
  • to taste fresh cilantro, chopped (for garnish)

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, mix together the olive oil, lime zest, lime juice, minced garlic, chili powder, paprika, ground cumin, oregano, salt, and black pepper to create a marinade.
  3. Place the chicken thighs in a baking dish and pour the marinade over them, ensuring they’re coated well.
  4. Drizzle the honey over the marinated chicken.
Cooking
  1. Bake in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  2. Garnish with fresh cilantro before serving.
  3. Serve with lime wedges.

Notes

To store leftover Chili Lime Chicken Thighs, let them cool completely. Place them in an airtight container and refrigerate for up to 3-4 days. You can also freeze them for up to 3 months. Just make sure to thaw them in the refrigerator before reheating.
