  • 1 tsp cumin
  • 1 tsp oregano
  • Salt and pepper to taste

Preparation and Cooking
  1. In a large pot, heat some oil over medium heat and sauté the onions until translucent.
  2. Add the garlic and cook until fragrant.
  3. Add the chicken thighs and cook until browned on both sides.
  4. Stir in the diced tomatoes, chipotle peppers, cumin, oregano, salt, and pepper.
  5. Simmer until the chicken is cooked through and tender.
  6. Shred the chicken with two forks and mix it back into the sauce.
  7. Serve in tortillas or over rice and garnish with fresh cilantro.

Notes

For extra flavor, marinate the chicken in the spices for an hour before cooking. For more heat, add more chipotle peppers or hot sauce. You can substitute chicken thighs with breasts for a leaner option.
