  • 4 pieces boneless, skinless chicken breasts Pound to an even thickness for cooking.
  • 1/2 cup all-purpose flour For dredging the chicken.
  • Salt and pepper to taste Salt and pepper Season chicken evenly.
  • 1/4 cup olive oil For frying the chicken.
  • 1/4 cup butter Melted in skillet.
  • 1/2 cup chicken broth Adds flavor to the sauce.
  • 1/4 cup fresh lemon juice Use fresh for better flavor.
  • 1/4 cup capers Can substitute with green olives.
  • 2 tablespoons fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Flatten chicken breasts to an even thickness. Season with salt and pepper, then dredge in flour, shaking off excess.
Cooking
  1. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat.
  2. Add chicken breasts to the skillet and cook until golden brown on both sides, about 4-5 minutes per side. Remove chicken and set aside.
  3. In the same skillet, add chicken broth, lemon juice, and capers. Bring to a simmer, scraping up any browned bits.
  4. Return chicken to the skillet and cook for 2-3 minutes, allowing the chicken to absorb the flavors.
  5. Stir in remaining butter and parsley before serving.

Notes

Serve hot over pasta or beside roasted vegetables. Sprinkle extra parsley on top for color. Lemon wedges can be served on the side.
