  • 1 pound ground chicken
  • 1 cup shredded coconut
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 lime Juice and zest of
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup breadcrumbs
  • 1 egg (optional, for binding)
  • Cooking spray or oil for baking

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine the ground chicken, shredded coconut, garlic, ginger, lime juice and zest, salt, pepper, breadcrumbs, and egg (if using). Mix until well combined.
  3. Form the mixture into meatballs, about 1-2 inches in diameter, and place them on the prepared baking sheet.
  4. Spray or brush the meatballs lightly with cooking spray or oil.
Cooking
  1. Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
  2. Serve with rice, noodles, or your favorite dipping sauce.

Notes

Coconut Chicken Meatballs can be served with a side of rice or noodles, sweet chili sauce, or a tangy lime dipping sauce. They can also be stored for 3-4 days in the refrigerator or frozen for up to 3 months.
