Preparation
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the ground chicken, shredded coconut, garlic, ginger, lime juice and zest, salt, pepper, breadcrumbs, and egg (if using). Mix until well combined.
- Form the mixture into meatballs, about 1-2 inches in diameter, and place them on the prepared baking sheet.
- Spray or brush the meatballs lightly with cooking spray or oil.
Cooking
- Bake in the preheated oven for 20-25 minutes, or until golden brown and cooked through.
- Serve with rice, noodles, or your favorite dipping sauce.
Notes
Coconut Chicken Meatballs can be served with a side of rice or noodles, sweet chili sauce, or a tangy lime dipping sauce. They can also be stored for 3-4 days in the refrigerator or frozen for up to 3 months.
