  • 1 lb chicken breast strips
  • 2 pieces bell peppers (sliced)
  • 1 cup broccoli florets
  • 1 cup carrots (sliced)
  • 1 cup snap peas
  • 1 piece onion (sliced)
  • 3 cloves garlic (minced)
  • 1 tbsp fresh ginger (grated)
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil

Method
 

Cooking Instructions
  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes.
  3. Add the onions and cook for 2-3 minutes until soft.
  4. Add bell peppers, broccoli, carrots, and snap peas; stir-fry until veggies are tender-crisp, about 4-5 minutes.
  5. Stir in garlic, ginger, and soy sauce, mixing well. Cook for an additional 1-2 minutes.
  6. Season with salt and pepper to taste.
  7. Serve over rice or noodles and top with cashews or sesame seeds.

Notes

For best results, cut the chicken into similar-sized strips for even cooking. Frozen vegetables can be used if fresh ones aren't available; just add them towards the end of cooking. Feel free to experiment with sauces like teriyaki or hoisin for a different twist.
