- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Add the chicken strips and cook until browned and cooked through, about 5-7 minutes.
- Add the onions and cook for 2-3 minutes until soft.
- Add bell peppers, broccoli, carrots, and snap peas; stir-fry until veggies are tender-crisp, about 4-5 minutes.
- Stir in garlic, ginger, and soy sauce, mixing well. Cook for an additional 1-2 minutes.
- Season with salt and pepper to taste.
- Serve over rice or noodles and top with cashews or sesame seeds.
Notes
For best results, cut the chicken into similar-sized strips for even cooking. Frozen vegetables can be used if fresh ones aren't available; just add them towards the end of cooking. Feel free to experiment with sauces like teriyaki or hoisin for a different twist.
