  • 2 pounds chicken breast, cut into chunks
  • 1/2 cup cowboy butter Butter mixed with garlic, herbs, and spices
  • Skewers (wooden or metal) Soak wooden skewers in water if using

Preparation
  1. In a bowl, mix olive oil, garlic, herbs, paprika, cumin, salt, and pepper.
  2. Add chicken chunks to the marinade, coat well, and refrigerate for at least 30 minutes.
Cooking
  1. Preheat grill to medium-high.
  2. Thread marinated chicken onto skewers.
  3. Grill chicken skewers for 10-12 minutes, turning occasionally, until cooked through.
  4. Brush with cowboy butter during the last few minutes of grilling.

Notes
