Ingredients
  

For the filling
  • 8 oz cream cheese, softened Make sure it's very soft for easy mixing.
  • 1/2 cup cooked bacon, chopped
  • 1 cup shredded cheddar cheese You can substitute with different cheeses for varied flavors.
  • 1/4 teaspoon garlic powder
  • to taste Salt and pepper
Main ingredients
  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour Can be substituted with gluten-free flour.
  • 2 large eggs, beaten
  • 1 cup crushed Doritos (Nacho Cheese flavor) Can be replaced with crushed whole-grain crackers.
  • 2 tablespoons olive oil for cooking

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the cream cheese, cooked bacon, cheddar cheese, garlic powder, salt, and pepper.
  3. Cut a pocket into each chicken breast and fill with the cream cheese mixture.
Coating
  1. Dredge each stuffed chicken in flour, dip in beaten eggs, and coat with crushed Doritos.
Cooking
  1. Heat olive oil in a pan over medium heat and brown the chicken on both sides.
  2. Transfer the chicken to a baking dish and bake for 25-30 minutes or until the chicken is cooked through.
  3. Let it rest for a few minutes before serving.

Notes

This stuffed chicken pairs well with salad, steamed vegetables, rice, or mashed potatoes. Don't overstuff the chicken to prevent it from bursting while cooking. For added spice, consider including jalapeños in the filling.
