Preparation
  1. In a skillet, brown the ground beef with chopped onion and minced garlic over medium heat. Drain excess fat.
  2. Transfer the beef mixture to the crockpot.
  3. Add uncooked pasta, diced tomatoes (with juice), beef broth, cream cheese, and Italian seasoning to the crockpot. Stir to combine all ingredients well.
Cooking
  1. Cook on low for 4-5 hours or until the pasta is tender.
  2. Stir in shredded cheddar cheese until it melts. Season with salt and pepper to taste.
  3. Serve warm, garnished with extra shredded cheese or fresh herbs if desired.
