Pasta and Sauce Base
  • 1 pound gnocchi Store-bought or homemade
  • 1 cup cooked and shredded chicken Rotisserie chicken works great
  • 2 cups spinach Fresh or frozen (thawed and drained)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup shredded mozzarella cheese
Flavor Enhancers
  • 1/2 cup cooked bacon, crumbled For topping
  • 1 tablespoon olive oil
  • 1 teaspoon garlic, minced
  • to taste Salt
  • to taste Pepper

Method
 

Cooking
  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the spinach to the skillet and cook until it wilts down.
  3. Pour in the chicken broth and heavy cream. Bring the mixture to a simmer.
  4. Add the shredded chicken and gnocchi to the skillet. Cook until the gnocchi floats to the top, which usually takes a few minutes.
  5. Stir in the mozzarella cheese and continue cooking until it melts and creates a creamy sauce.
  6. Season with salt and pepper to taste.
  7. Top each serving with crispy bacon before serving.
