Chicken Preparation
  • 2 pieces boneless skinless chicken breasts Pounded to ½-inch thickness
  • 2 large eggs Beaten
Coating Mix
  • 1 cup panko breadcrumbs
  • ½ cup finely grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper
Cooking Spray
  • 1 spray Olive oil spray For greasing chicken

Method
 

Preparation
  1. Pound chicken to ½-inch thickness and pat dry.
  2. Beat eggs in a shallow bowl with a pinch of salt.
  3. In another bowl, combine panko, Parmesan, and all seasonings.
  4. Dip each chicken piece in the egg, then coat in the breadcrumb mixture.
  5. Preheat air fryer to 375°F for 3–5 minutes.
  6. Spray both sides of the chicken lightly with oil.
Cooking
  1. Place chicken in the air fryer basket in a single layer.
  2. Cook for 10 minutes, flip, and cook another 5–7 minutes until golden and internal temperature reaches 165°F.
  3. Let rest for 3 minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the air fryer to regain crispiness.
