  • as needed tablespoon olive oil For frying
For the Sandwich Assembly
  • 4 slices focaccia bread Can be substituted with other soft breads
  • 1/2 cup Romesco sauce Use fresh for best flavor
  • as desired lettuce or other toppings Customize to your preference

Preparation
  1. Preheat the oil in a frying pan over medium heat.
  2. Season the chicken breasts with salt and pepper.
  3. Dredge the chicken breasts in flour, dip in beaten egg, and coat in breadcrumbs.
Cooking
  1. Fry the chicken in hot oil until golden brown and cooked through, about 4-5 minutes per side.
  2. Toast the focaccia bread slices lightly.
