  • 1 cup long grain rice Can use brown rice but may need to adjust cooking time.
  • 4 cups chicken broth Use gluten-free broth if needed.
  • 1 piece lemon Use zest and juice for best flavor.
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. In the slow cooker, combine chicken, rice, chicken broth, lemon zest, lemon juice, onion, and garlic. Season with salt and pepper.
  2. Stir to mix all ingredients well.
Cooking
  1. Cover and cook on low for 4-6 hours or until chicken is tender and rice is cooked.
  2. Fluff the rice and shred the chicken with two forks.
  3. Garnish with fresh parsley before serving.

Notes

Serve hot, optionally with a side salad or steamed vegetables. You can add vegetables during the last hour of cooking for a complete one-pot meal. For extra flavor, consider adding herbs like thyme or rosemary.
