  • 3-4 pounds chuck roast Choose a good quality for best flavor and tenderness.
  • 4 pieces carrots, cut into chunks
  • 4 pieces potatoes, cut into chunks
  • 1 piece onion, quartered
  • 4 cloves garlic, minced
  • 2 cups beef broth Homemade beef broth adds richness.
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • to taste Salt and pepper Don't skip the seasoning for enhanced flavor.

Method
 

Preparation
  1. Season the chuck roast with salt and pepper.
  2. Place the roast in the slow cooker.
  3. Add the carrots, potatoes, onion, and garlic around the roast.
  4. Pour the beef broth and Worcestershire sauce over the top.
  5. Sprinkle dried thyme over everything.
Cooking
  1. Cover and cook on low for 8-10 hours or on high for 4-5 hours until the meat is tender.
Making Gravy (Optional)
  1. Remove the roast and vegetables, and transfer the cooking liquid to a saucepan.
  2. Bring to a boil and thicken if desired.
Serving
  1. Once your pot roast is ready, slice the meat and serve it with the vegetables.
  2. Ladle some of the cooking liquid over the top for extra flavor.
  3. It pairs well with crusty bread or over mashed potatoes.

Notes

If you have leftovers, store them in an airtight container in the fridge for about 3-4 days, or freeze for up to three months. Let cool completely before storing.
