Preparation
- Season the chuck roast with salt and pepper.
- Place the roast in the slow cooker.
- Add the carrots, potatoes, onion, and garlic around the roast.
- Pour the beef broth and Worcestershire sauce over the top.
- Sprinkle dried thyme over everything.
Cooking
- Cover and cook on low for 8-10 hours or on high for 4-5 hours until the meat is tender.
Making Gravy (Optional)
- Remove the roast and vegetables, and transfer the cooking liquid to a saucepan.
- Bring to a boil and thicken if desired.
Serving
- Once your pot roast is ready, slice the meat and serve it with the vegetables.
- Ladle some of the cooking liquid over the top for extra flavor.
- It pairs well with crusty bread or over mashed potatoes.
Notes
If you have leftovers, store them in an airtight container in the fridge for about 3-4 days, or freeze for up to three months. Let cool completely before storing.
