Preparation
- Place the chicken breasts at the bottom of the crockpot.
- Add the sliced bell peppers and onion on top of the chicken.
- Sprinkle the fajita seasoning over the ingredients.
- Pour the lime juice over everything and season with salt and pepper.
Cooking
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
- Shred the chicken in the crockpot with two forks and mix with the vegetables.
Serving
- Serve in warm tortillas with your favorite toppings.
Notes
Leftovers can be stored in an airtight container in the fridge for about 3-4 days. Reheat before serving. Can freeze the chicken and veggie mix for up to three months. Consider adding more veggies like zucchini or corn for extra nutrition.
