  • 1 packet fajita seasoning Easily available in stores, can substitute with taco seasoning.
  • 2 pieces limes, juiced Fresh lime juice adds great flavor.
  • to taste Salt and pepper Adjust according to your preference.
  • to serve pieces Tortillas Use flour or corn tortillas based on preference.

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the sliced bell peppers and onion on top of the chicken.
  3. Sprinkle the fajita seasoning over the ingredients.
  4. Pour the lime juice over everything and season with salt and pepper.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  2. Shred the chicken in the crockpot with two forks and mix with the vegetables.
Serving
  1. Serve in warm tortillas with your favorite toppings.

Notes

Leftovers can be stored in an airtight container in the fridge for about 3-4 days. Reheat before serving. Can freeze the chicken and veggie mix for up to three months. Consider adding more veggies like zucchini or corn for extra nutrition.
