  • 1.5 lbs boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 cup diced bell peppers
  • 1 medium onion, diced
  • to taste Salt
  • to taste Pepper

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add black beans, corn, diced tomatoes, taco seasoning, chicken broth, bell peppers, and onion on top of the chicken.
  3. Stir gently to combine the ingredients.
Cooking
  1. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and shreds easily.
  2. Remove the chicken, shred it with two forks, then return it to the crockpot and stir to combine.
Serving
  1. Serve in tacos, bowls, or wraps as desired.

Notes

To store leftover Crockpot Fiesta Chicken, let it cool down to room temperature. Place it in an airtight container and store it in the refrigerator for up to 3-4 days. For longer storage, freeze for up to 3 months. Label with the date.
