Preparation
- Place the chicken breasts at the bottom of the crockpot.
- Add black beans, corn, diced tomatoes, taco seasoning, chicken broth, bell peppers, and onion on top of the chicken.
- Stir gently to combine the ingredients.
Cooking
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is fully cooked and shreds easily.
- Remove the chicken, shred it with two forks, then return it to the crockpot and stir to combine.
Serving
- Serve in tacos, bowls, or wraps as desired.
Notes
To store leftover Crockpot Fiesta Chicken, let it cool down to room temperature. Place it in an airtight container and store it in the refrigerator for up to 3-4 days. For longer storage, freeze for up to 3 months. Label with the date.
