Ingredients
  

Fresh Vegetables
  • 2 large cucumbers, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 orange bell pepper, thinly sliced
  • ¼ cup red onion, thinly sliced
Dressing and Herbs
  • ¼ cup fresh dill, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar Can substitute with white wine vinegar.
  • 1 tablespoon lemon juice
  • 1 teaspoon honey Adjust sweetness to taste.
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the sliced cucumbers, red, yellow, and orange bell peppers, and red onion.
  2. In a small bowl, whisk together olive oil, apple cider vinegar, lemon juice, and honey until well combined.
  3. Pour the dressing over the cucumber and pepper mixture.
  4. Add the chopped fresh dill and toss everything together until the vegetables are well coated with the dressing.
  5. Season with salt and pepper to taste.
  6. Refrigerate the salad for at least 15 minutes before serving to allow the flavors to meld together.

Notes

Serve chilled for the best flavor. Works well as a side dish alongside grilled meats or sandwiches.
