  • 2 cups mixed vegetables (bell peppers, broccoli, carrots) Use fresh vegetables for the best flavor.
  • 3 tablespoons soy sauce Use gluten-free soy sauce for a gluten-free version.
  • 1 tablespoon ginger (grated) Fresh ginger adds flavor.
  • 2 cloves garlic (minced)
  • 1 tablespoon vegetable oil Used for cooking.
  • Salt and pepper to taste
  • Cooked rice (for serving) Serve stir fry over cooked rice.

Cooking
  1. Heat the vegetable oil in a pan over medium-high heat.
  2. Add the sliced beef and cook until browned, about 3-4 minutes.
  3. Add garlic and ginger, sauté for 1 minute.
  4. Add the mixed vegetables and stir-fry for 2-3 minutes until they're tender-crisp.
  5. Pour in soy sauce and stir well.
  6. Season with salt and pepper to taste.
  7. Serve hot over cooked rice.

Notes

To store leftovers, let cool and refrigerate in an airtight container for up to 3 days, or freeze for up to 2 months. Thaw in the fridge before reheating.
