  • 1 lb ground beef Choose lean ground beef for a healthier option.
  • 1 onion, chopped Yellow or white onion works best.
  • 2 cups shredded cheese (cheddar or Mexican blend) Feel free to mix different kinds of cheese.
  • 1 can enchilada sauce Store-bought for convenience.
  • 8 tortillas Corn or flour tortillas can be used.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper Adjust according to your preference.
  • 1 tablespoon Olive oil for cooking Can substitute with vegetable oil.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a pan, heat olive oil over medium heat and sauté onions until translucent.
  3. Add ground beef, cumin, chili powder, salt, and pepper, cooking until the beef is browned.
  4. Spread a little enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the beef mixture and sprinkle with cheese, rolling them up and placing them seam-side down in the dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  7. Bake for 25-30 minutes until the cheese is bubbly and golden. Serve hot.

Notes

These enchiladas are best served hot from the oven. Top with additional cheese, fresh cilantro, sour cream, or diced avocado for enhanced flavor. A side of rice or beans pairs well with the dish.
