Preparation
- Preheat the oven to 350°F (175°C).
- In a pan, heat olive oil over medium heat and sauté onions until translucent.
- Add ground beef, cumin, chili powder, salt, and pepper, cooking until the beef is browned.
- Spread a little enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the beef mixture and sprinkle with cheese, rolling them up and placing them seam-side down in the dish.
- Pour the remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 25-30 minutes until the cheese is bubbly and golden. Serve hot.
Notes
These enchiladas are best served hot from the oven. Top with additional cheese, fresh cilantro, sour cream, or diced avocado for enhanced flavor. A side of rice or beans pairs well with the dish.
