Ingredients
  

For the chicken
  • 2 pieces boneless, skinless chicken breasts
  • 1 cup breadcrumbs Use fresh breadcrumbs for extra crunch.
  • 1/2 cup grated Parmesan cheese
  • 1 cup marinara sauce Can substitute with alfredo sauce or homemade tomato sauce.
  • 1 cup shredded mozzarella cheese Try other types of cheese like provolone or fontina for variations.
  • 1 piece egg Beaten and seasoned with salt and pepper.
  • to taste Salt and pepper
  • Olive oil for frying
  • Fresh basil for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Flatten the chicken breasts to an even thickness.
  3. In a shallow bowl, beat the egg and season it with salt and pepper.
  4. In another bowl, combine the breadcrumbs and Parmesan cheese.
Cooking
  1. Dip each chicken breast in the egg, then coat with the breadcrumb mixture, pressing to adhere.
  2. In a skillet, heat olive oil over medium heat. Fry the breaded chicken for 4-5 minutes on each side until golden brown.
  3. Place the chicken in a baking dish, cover each piece with marinara sauce, and top with mozzarella cheese.
  4. Bake in the preheated oven for 20 minutes or until the chicken is cooked through and cheese is melted and bubbly.
Serving
  1. Garnish with fresh basil if desired and serve hot. Pair it with spaghetti, a green salad, or garlic bread.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. You can freeze Chicken Parmesan without the sauce and cheese for best results. Reheat by baking until warmed through.
