  • 2 pounds boneless, skinless chicken breasts
  • 1 large onion, sliced
  • 1 medium bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 packet fajita seasoning mix
  • 1 cup chicken broth Can substitute with water
For Serving
  • Tortillas For serving the fajitas
  • Optional toppings (sour cream, cheese, salsa, avocado) Customize as desired

Method
 

Cooking
  1. Place the chicken breasts in the slow cooker.
  2. Add sliced onion, bell pepper, and minced garlic.
  3. Sprinkle fajita seasoning mix over the top.
  4. Pour chicken broth in.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Once done, shred the chicken with two forks and stir to combine.
Serving
  1. Serve in warm tortillas with your favorite toppings.

Notes

For extra flavor, add lime juice before serving. For heat, consider adding sliced jalapeƱos. Keep leftovers in an airtight container for 3-4 days, or freeze for up to 3 months.
