Ingredients
  

Main Ingredients
  • 1 lb chicken breasts Fresh or frozen
  • 1 bell pepper, sliced Can use any color
  • 1 onion, sliced
  • 1 can diced tomatoes 14.5 oz can recommended
  • 1 packet fajita seasoning Store-bought or homemade
  • to taste Salt and pepper
  • Tortillas for serving Warm for best taste
Optional Toppings
  • cheese Shredded or melted
  • sour cream
  • cilantro Fresh, for garnish

Method
 

Preparation
  1. Place the chicken breasts in the crockpot.
  2. Add the sliced bell pepper and onion on top of the chicken.
  3. Pour the can of diced tomatoes over the mixture.
  4. Sprinkle the fajita seasoning, salt, and pepper evenly over everything.
Cooking
  1. Cover and cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through.
  2. Once done, shred the chicken using two forks.
Serving
  1. Serve the mixture in tortillas with optional toppings.

Notes

For extra flavor, marinate the chicken overnight with the fajita seasoning. Use frozen chicken if needed. You can also add other vegetables like zucchini or corn for more variety. The shredding step helps the flavors blend better.
