  • 4 pieces chicken breasts Boneless and skinless recommended
  • 1/2 cup all-purpose flour
  • to taste Salt and pepper
  • 3 tablespoons olive oil
  • 4 tablespoons butter
  • 1/2 cup chicken broth
  • 1/2 cup fresh lemon juice Freshly squeezed recommended
  • 1/4 cup capers Optional, can be skipped
  • Chopped parsley for garnish For serving

Method
 

Preparation
  1. Season chicken breasts with salt and pepper, then dredge in flour.
  2. In a large skillet, heat olive oil over medium-high heat.
Cooking
  1. Add chicken to the skillet and cook until golden brown, about 4-5 minutes per side.
  2. Remove chicken from the skillet and set aside.
  3. In the same skillet, add butter, chicken broth, lemon juice, and capers. Bring to a simmer.
  4. Return chicken to the skillet and cook for an additional 5 minutes to allow flavors to combine.
Serving
  1. Serve hot, garnished with chopped parsley.

Notes

If you have leftovers, store in an airtight container in the fridge for about 3-4 days. Reheat in a skillet over low heat. Avoid microwaving to prevent tough chicken. Adjust lemon juice to taste and consider fresh herbs for added flavor.
