Preparation
- Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
- In a bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder until well combined.
- In another bowl, mix the milk, egg, and vegetable oil until smooth and uniform in color.
- Slowly add the wet mixture into the dry ingredients, stirring gently until just combined. Avoid over-mixing.
Baking
- Add the pizza sauce, shredded mozzarella cheese, and pepperoni (or your choice of toppings) into the batter. Gently fold until incorporated.
- Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
- Sprinkle extra mozzarella and Parmesan cheese on top of each muffin.
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
- Once baked, let cool for about 5 minutes, then transfer to a wire rack to cool completely.
- If desired, garnish with fresh chopped basil or oregano before serving.
Notes
Store muffins in an airtight container. They can be kept at room temperature for 1-2 days or refrigerated for up to a week. Freeze for up to a month.
