Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tsp garlic powder
Wet Ingredients
  • 1 cup milk
  • 1 large egg beaten
  • 1/4 cup vegetable oil
Pizza Ingredients
  • 1/2 cup pizza sauce
  • 2 cups shredded mozzarella cheese plus extra for topping
  • 1/2 cup pepperoni or any favorite topping
Toppings
  • 1/4 cup Parmesan cheese for topping
  • fresh basil or oregano optional for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a bowl, whisk together the all-purpose flour, baking powder, salt, and garlic powder until well combined.
  3. In another bowl, mix the milk, egg, and vegetable oil until smooth and uniform in color.
  4. Slowly add the wet mixture into the dry ingredients, stirring gently until just combined. Avoid over-mixing.
Baking
  1. Add the pizza sauce, shredded mozzarella cheese, and pepperoni (or your choice of toppings) into the batter. Gently fold until incorporated.
  2. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
  3. Sprinkle extra mozzarella and Parmesan cheese on top of each muffin.
  4. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  5. Once baked, let cool for about 5 minutes, then transfer to a wire rack to cool completely.
  6. If desired, garnish with fresh chopped basil or oregano before serving.

Notes

Store muffins in an airtight container. They can be kept at room temperature for 1-2 days or refrigerated for up to a week. Freeze for up to a month.
