  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, sliced
  • 1 large bell pepper, sliced (any color)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 packet fajita seasoning mix
  • 1 cup sour cream Can be substituted with Greek yogurt for a lighter version.
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
Optional garnish
  • Fresh cilantro, chopped For garnish, optional.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chicken, onion, and bell pepper. Cook until the chicken is browned and cooked through, about 7-10 minutes.
  3. Stir in the fajita seasoning mix, sour cream, and chicken broth. Mix well and let it simmer for a few minutes.
Assembly and Baking
  1. In a baking dish, layer half of the chicken mixture, then sprinkle with half of the cheddar and mozzarella cheeses.
  2. Add the remaining chicken mixture and top with the remaining cheese.
  3. Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
  4. Garnish with fresh cilantro if desired before serving.

Notes

Serve warm with rice or tortilla chips. For an enhanced flavor experience, consider offering toppings such as avocado, salsa, or additional sour cream.
