  • 1 red bell pepper, diced
  • 1/4 red onion, finely chopped For a milder salsa, use cucumber instead.
  • 1 tablespoon olive oil
  • 1 lime, juiced
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional) Can be used as a garnish.

Preparation
  1. Preheat the grill or stovetop pan over medium heat.
  2. Season the salmon fillets with olive oil, salt, and pepper.
Cooking
  1. Grill the salmon for about 5-7 minutes on each side, or until cooked through.
Making the Salsa
  1. In a bowl, combine diced mango, red bell pepper, red onion, lime juice, and cilantro. Mix well to create the salsa.

Notes

If you have leftovers, store the salmon and salsa separately in airtight containers. The salmon can be kept in the fridge for up to 2 days, while the salsa is best eaten within 1 day for the freshest taste. Reheat the salmon gently in the microwave or on the stovetop when ready to eat.
