  • 1 lb baby potatoes, halved
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup beef broth

Preparation
  1. In a slow cooker, add the beef chuck and baby potatoes.
  2. In a small saucepan, melt the butter over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Pour the garlic butter over the beef and potatoes.
  4. Season with salt, pepper, thyme, and rosemary.
  5. Add the beef broth to the slow cooker.
  6. Stir everything to combine.
Cooking
  1. Cover and cook on low for 6-8 hours or until the beef is tender.
Serving
  1. Serve warm, garnished with fresh herbs if desired.

Notes

For extra flavor, you can add other vegetables such as carrots or onions to the slow cooker. If you prefer a thicker sauce, after cooking, you can remove some of the broth and thicken it with cornstarch before mixing it back in. Always taste and adjust the seasoning before serving to ensure the dish has the right flavor.
