  • 4 pieces boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup garlic butter
  • 4 pieces large pieces of bread (like French bread or Italian bread)
  • 1 teaspoon minced garlic
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a pan, cook the chicken breasts over medium heat until fully cooked. Season with salt and pepper.
  3. Remove the chicken and shred it into pieces.
  4. Mix the shredded chicken with mozzarella cheese and garlic butter.
  5. Cut the bread in half lengthwise, and scoop out some of the insides to create a hollow space.
  6. Stuff the chicken and cheese mixture into the hollowed bread.
Baking
  1. Place the stuffed bread on a baking sheet and bake for 15-20 minutes until the cheese is melted and the bread is golden.
  2. Remove from the oven and garnish with fresh parsley, if desired. Serve warm.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for up to 2-3 days. To reheat, place them in the oven at 350°F (175°C) until warmed through. You can also microwave them, but they may not have the same crispy texture. Use rotisserie chicken to save time. Experiment with different cheeses like cheddar or pepper jack for a unique taste. Add vegetables like spinach or bell peppers to the chicken mixture for added nutrition. For a bit of spice, add some crushed red pepper flakes to the chicken mixture. For a vegetarian version, replace the chicken with sautéed mushrooms and spinach. Use vegan cheese to make it plant-based.
