  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced Use fresh garlic for the best flavor.
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh parsley, chopped (optional, for garnish)

Method
 

Preparation
  1. Pat the steak bites dry with paper towels and season them with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
Cooking
  1. Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until browned. Remove steak from skillet and set aside.
  2. Add butter to the same skillet. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  3. Add the zucchini to the skillet. Cook for 3-5 minutes, stirring occasionally, until tender-crisp.
  4. Return the steak bites to the skillet. Toss everything together to coat with the garlic butter.
  5. Cook for another 1-2 minutes until the steak is heated through.
  6. Garnish with fresh parsley if desired and serve immediately.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, warm them in a skillet over low heat until heated through. Make sure to pat the steak dry; this helps it sear better. Don’t overcrowd the skillet when cooking the steak. Use fresh garlic for the best flavor. You can customize this recipe by adding other vegetables, such as bell peppers or mushrooms.
